Apple Raisin Oven Pancake
1 apple–cored, peeled and sliced
1/3 cup raisins
2 tbsp brown sugar
1 tsp cinnamon
2/3 cup milk
2/3 cup flour
2 tbsp butter, melted
Toss together apple slices, raisins, brown sugar, and cinnamon. Spoon into greased 9-inch pie plate. Bake at 350 degrees F for 10-15 minutes. Remove from oven, set aside. Whisk together eggs, milk, flour and butter. Pour over apple mixture. Increase oven to 450 degrees F and bake until golden, about 15 minutes. Pancake will puff up and fall slightly when removed from oven. Sprinkle with powdered sugar; slice into wedges. Serve warm. Makes 8 servings.
*You can use whole wheat flour with a tbsp of ground flaxseed to make it healthier!
**You can also pour a little bit of maple syrup over the top and then sprinkle with powdered sugar…yum!
