Yum yum yum! These are amazing (and of course healthy)! Kate devours them and I’ve made them enough times that I’ve decided they are blog-worthy:)
Blueberry Banana Waffles
1 1/4 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 cup milk (1 or 2%) (or organic whole milk, which is all I have on hand for Kate:)
1/2 tbsp vanilla
1 tsp almond
2 very ripe bananas, mashed
handful (or more) of blueberries (fresh or frozen-thawed)
1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and cinnamon. Stir in milk and eggs, almond extract, vanilla extract and mashed banana until mixture is smooth. Fold in blueberries.
2. Spray preheated waffle iron with non-stick cooking spray. Pour waffle batter onto the hot waffle iron. Cook until golden brown and serve hot. Great with real blueberry syrup!
