I tweaked a great banana bread recipe I found on allrecipes.com last week, and it turned out great! I wanted to find some way to healthify it, and it worked.
Just in time for cooler weather, there is nothing like the hot oven heating up your kitchen and living room with the sweet smell of baking banana bread. Mmmmmm.
Flax Seed Banana Bread
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
2-3 tbps ground golden flax seed
1/2 cup butter, softened
3/4 cup brown sugar
2 eggs, beaten
1-2 tsp pure vanilla extract
2 1/3 cups mashed, overripe bananas
1. Preheat oven to 350 degrees F. Lightly grease 9×5 inch loaf pan. In a large bowl, combine flour, baking soda, salt and ground flax seed.
2. In a separate bowl, cream together butter and brown sugar. Stir in eggs, vanilla and mashed bananas until well blended. Stir banana mixture into flour mixture with a wooden spoon until just moist. Pour batter into prepared loaf pan.
3. Bake for 60-65 minutes, until toothpick inserted into center of loaf comes out clean. Let bread cool for 10 minutes, then turn out onto a wire rack.
